Our fine Bobal wine contains 71 Kcal, whereas a regular wine often has >100 Kcal. These calories are calculated by the Spanish institute, which chemically analyzes every wine. Only after strict control may the wine be officially released on the market. Because there is no sugar (and carbohydrates) in the wine, the calories are much lower! Alcohol also contributes to calories but also carries the flavor of the wine. Because we also stand for 'delicious', we have sought a good balance between no sugar and a limited alcohol percentage and full flavor. Otherwise, the wine wouldn't be wine anymore. And wine should be enjoyed consciously!
The wine undergoes complete dry fermentation, meaning all sugar is converted into alcohol. The grapes are harvested at just the right time to ensure that the sugar content is not too high, preventing the alcohol level from becoming too elevated when all sugars are fermented.
Our wine contains 80 ppm of sulfites, whereas regular wine contains 150 ppm. Because red wines contain tannins (from the red skins) that act as preservatives, the addition of sulfites is less necessary compared to white wines. Since we work very cleanly and process pure, whole, hand-picked grapes, we can maintain cleanliness in our process. Therefore, we do not need additional preservatives (which are sulfites). Our wines require less than half the usual amount of sulfites.
Our wine is organically made, meaning that there are no chemical residues to be found in the wine. The grape bunches are processed within an hour in the wine cellars, ensuring that no wild fermentation can occur and no further stabilization of the wine or removal of bacteria is needed. Pure nature in the bottle.

The vineyards are situated in the heart of a nature reserve, partially managed by Bodegas Nodus. Their vast estate of 600 hectares seamlessly integrates with the surrounding environment. We call this 'integrated agriculture.' It's an officially designated Natura 2000 area by the European Union: Parque Natural de las Hoces del Cabriel. Our wine is literally PURE nature.
The wines are clarified using bentonite, a very fine clay. This filters the wine and ensures that all cloudy particles settle to the bottom. Sometimes this process is done using (pork) gelatine or egg white. However, we use a pure product straight from nature.

The Walk in the Woods vineyard is truly nestled among the forests at 1200 meters altitude. The vines are older than usual, which lends to the wines having a more intense flavor profile. There can be a significant temperature difference between day and night. This results in wines that are not high in alcohol but slightly higher than the white wines because this vineyard is harvested later. The sun continues to warm the soil for a while, and the roots absorb all the nutrients from the ground. In this red wine, you’ll find flavors of stewed fruit (plum and blackberry), as well as the intense yet soft spiciness of the herbs from the vineyard’s surroundings. Fading into a finish with hints of dark chocolate (unfortunately not from the cocoa tree but a beautiful amalgamation of all the other flavors).
